Position Overview:
The Chef is responsible for delivering services provided by the Culinary Department and providing high quality food preparation, plate presentation, and prompt service to all residents. The Chef must possess general knowledge of and demonstrate proficiency in various food preparation techniques, serving methods, portion control standards, and general nutritional requirements for residents of senior communities. Also, maintains a clean, safe and sanitary kitchen.
Responsibilities:
- Under the direction of the Director of Food and Beverage, direct and participate in food preparation, following standard recipes and special diet orders. Plan food production to coordinate with meal serving hours so that quality, temperature, and food appearance are preserved.
- Work within all budget guidelines, safety and sanitation standards and policies.
- Promptly discuss and resolve any potential food service and care coordination problems with all involved team members and team leaders.
- Manage all aspects of food and supply management including, securing items in time for food prep, ensuring leftovers are stored, then used, and inventories maintained – all according to Dietary Standards and Policies
- Keep assigned workstation in a safe and sanitary condition and be familiar and comply with all state and local health department practices, safety practices, and infection control practices
- Maintain acceptable standards of personal hygiene and comply with department dress code.
- Set up, break down and clean your work area/kitchen according to the Dietary Standards and Policies.
- Maintain a current Food Safety Manager’s permit or equivalent as regulated by state and local authorities
- Strives to maintain a safe working environment through the prevention of accidents, the preservation of equipment, and the achievement of safe working practices.
- Maintains a positive and professional demeanor toward residents, visitors, families, and co-workers.
Qualifications:
- 1+ Year(s) of experience as a cook preferred
- Ability to read and understand recipes and menus
- Serve Safe Certificate, preferred Food Safety Manager’s permit
- Must pass a background check as required by facility policies.
Physical Demands:
- Flow of work demands visual acuity, and must have the ability to handle simultaneous tasks in a fast-paced environment.
- Must be able to identify hazards, comprehend consequences and determine action to be taken.
- Subject to injury from falls, burns, odors, or cuts from equipment
- Position requires walking or standing 75% of the time.
- Must be able to lift and carry 50 lbs. and ladders up to 40 feet
- Must be able to move quickly, stand, walk, push, pull, bend, stoop, reach, and balance and carry supplies, as needed.
- Must have the ability to perform gross and fine motor skills.
- May be exposed to communicable diseases including influenza, HIV and hepatitis.
- May be exposed to cleaning chemicals, dust, and foul odors.
- During emergencies or natural disasters, may be required to report for duty as assigned by management for the duration of the disaster.
- May be required to work beyond normal working hours and on weekends and holidays, when necessary, as well as in other positions as needed.
- Works in a senior community environment with regular exposure to chronically ill and frail elderly.
- Push and pull equipment, work in cramped spaces, and be in good physical condition.
- He/she must possess a current state-specific driver’s license and have transportation at their disposal.
- Locate problems and arrive at solutions as swiftly as possible.
